In July 2019, Thecha Vadapav began its journey in a humble cloud kitchen at Ajmera Colony. What started as a small operation catering to corporate lunch orders quickly ignited a big trend. Our founder – an IT professional turned food entrepreneur – swapped his desk job for a stovetop and began crafting spicy, authentic vada pavs topped with fiery thecha (a traditional chili-garlic chutney). The response was immediate and overwhelming. Office workers raved about the “homemade” taste that reminded them of Mumbai’s street flavors, and word-of-mouth spread like wildfire. Little did we know, this tiny kitchen’s success would lay the foundation for Thecha Vadapav as we know it today, proving that when you serve quality with passion, people simply can’t get enough.
From day one, we were packing dozens of delivery boxes with our signature thecha-laced vada pavs and piping hot batata vadas (potato fritters) for hungry professionals. We still remember the thrill of seeing our first large corporate order – trays of vada pavs flying out the door to feed an entire office floor! This grand reception gave us the confidence to dream bigger. Ajmera Colony’s love for our food was the spark that lit our fire, inspiring us to expand beyond a delivery-only model. This original outlet may have been a back-kitchen, but it had a big heart – it proved there was a massive appetite for authentic, spicy Maharashtrian street food in a modern format. We’re forever grateful to the Ajmera community and our corporate customers for believing in us from the start.
